Gimonnet is a Chardonnay house through and through — based in Cuis, sitting on some of the oldest Chardonnay vines in the Côte des Blancs, and utterly uninterested in making anything else. Fleuron is where they turn up the intensity: mostly Grand Cru fruit from Cramant and Chouilly, rounded out with Cuis, drawn from eight separate lieux-dits and bottled only in vintages worth the trouble. 2019 gives it ripeness without losing the chalk. This is Blanc de Blancs with real body underneath the tension — full and textural, but always with that Côte des Blancs line of acidity running straight down the middle.
