The Cote des Bar sits closer to Chablis than to Reims, and for most of the last century its growers were treated as a fruit basket for the big houses up north. Pierre Demets, third generation in Gye-sur-Seine, took over the family vines in 2014 with no intention of continuing that arrangement, and the name of this bottling is not subtle about it. Intransigeance is Pinot Noir and Chardonnay from two parcels, aged for years on the lees and finished with almost no dosage, which means there is nowhere for a flaw to hide. What you get is chalk and weight instead of sweetness. This is a Champagne for dinner, not just for the toast.
