It's Aligote, Burgundy's overlooked white grape, growing on clay in the Beaujolais and treated with unusual patience. The juice is pressed straight into old barrels without settling, ferments on wild yeasts, and then sits two full years on its lees in a reductive environment before bottling unfiltered. That long, oxygen-starved rest gives the wine a saline, savory depth you almost never find at this level. This is Aligote for people who thought they had Aligote figured out.
