Giovanni Rosso Barolo Classico 2018
For a century the Rosso family grew grapes on Serralunga's best slopes and sold them to famous names. In the 1980s Giovanni decided the family name belonged on the label, and his son Davide -- Burgundy-trained, back home since 2001 -- has been proving him right ever since. This is the house's classic Barolo, and the cellar work behind it is deliberately old-school: spontaneous fermentation in concrete, gentle pump-overs rather than muscle, long aging in large French oak botti. Eight years on from the vintage, the 2018 has softened enough to pour tonight while still holding the tannic frame to keep evolving for a decade or more. Nebbiolo's great paradox is that it can be pale as a dark rose in the glass and built like a cathedral on the palate. If you're going to start somewhere, start here.
