SRC is an acronym for the family Parasiliti. Rori the winemaker, his wife Cinzia and their daughter Sandra. The winery is located just a 10 minute drive east from the charming city of Randazzo. This, their flawless expression of Mount Etna, is clean, precise, and aromatically complex with bright fruit, earthy undertones, and subtle notes of peppercorn, smoke, and spice. The wine is crafted from the Crasa and Calderara vineyards, which sit at an elevation of 650 to 700 meters above sea level. It blends 90 percent Nerello Mascalese with 10 percent of 120 year old co planted Nerello Cappuccio, Minella Bianca, and Sangiovese. After destemming and two pressings into 15hl foudres, the juice undergoes a three to four week skin maceration, moves to stainless steel and transfers then transferred to a 25hl botte, and finishes its journey aging in cement after malolactic fermentation.
