Sève is Olivier Horiot's single-vineyard Blanc de Noirs from En Barmont, a south-facing parcel of very old Pinot Noir on red clay over hard Kimmeridgian limestone in Les Riceys. Horiot, working biodynamically since the early 2000s in the Aube, ferments and ages in oak barrels on the lees with extended bottle time. The result is a vintage Champagne with the broader, riper, more savory side of Pinot Noir from a warm site, with the chalky tension you'd want from the appellation. A still-wine drinker's Champagne from one of the Aube's most thoughtful growers.
