Dama is Naveran's flagship, and it deliberately breaks the Cava mold: 85% Chardonnay with a splash of Parellada, rather than the usual Catalan trio. The Chardonnay is grown on the family's organic estate in the high Penedès and gives the wine real flesh — orchard fruit, a creamy texture, a fine and persistent bead — while the Parellada keeps it airy instead of heavy. A minimum of 18 months on the lees, often longer, builds a hint of pastry underneath. Wines like this are the argument for taking Cava seriously again.
