Cava has a factory problem, and this is the antidote. Mas Candi is a four-person winemaking collective in the Penedes, something like the Catalan answer to Envinate, and at its 2006 inception it was making some of the only true grower Cava anywhere. They have since walked away from the Cava DO entirely in favor of Corpinnat, which demands organic farming, hand harvesting, mostly indigenous grapes and long aging before release. This Brut Nature is led by Xarel-lo, the criminally underrated Catalan white, filled out with Macabeo, Sumoll and Parellada, and rested some thirty-two months on its lees with zero dosage. It's everything Cava should be: mineral, taut, and genuinely elegant.
