Ellison is one of the oldest Sauvignon Blanc plantings in the United States — a tiny 1.5-acre parcel on Sonoma Mountain planted in 1969 and dry-farmed by Marty and Alex themselves. Maître de Chai's house style — no new oak, native yeast, minimal sulfur, purity of site above all — is tailor-made for a vineyard this distinctive. Whole-cluster pressed and fermented in old oak. The result reads less like a varietal exercise and more like a slow, textural California white: stone fruit, white flower, a salty almond edge, and the kind of depth you don't expect from Sauv Blanc.
