weeks carbonic fermentation, the Cabernet Pfeffer was fermented whole cluster. Each lot was pressed and racked to tank then barrel for elevage. Blended a month prior to bottling and bottled on April 6th, 2025. Unfined and unfiltered (we coarse filter the lees)
