Roughly a third whole-cluster, native yeast, open-top fermentation, then six months in neutral barrel to keep things fresh. The 2025 is light on its feet at 12.5% alcohol: crunchy red cherry, strawberry, a whisper of pepper, soft tannins. Throw it in the fridge for twenty minutes, pull a cork, repeat.
