From a single estate vineyard, fermented in open-top tanks, aged briefly in stainless and neutral oak to keep the fruit fresh. Plum sauce, blue fruits, hoisin, and tobacco leaf — Jones calls it "a daily-drinking claret for your dining table," which is exactly right.
