Domaine Saint-Cyr VdF Melo 2023
Three grapes, one tank, layered in like a mille-feuille. Melo is Raphael Saint-Cyr's co-ferment of Gamay, Pinot Noir and Chardonnay from forty-year-old vines, stacked in alternating layers in concrete and left to macerate cold and carbonic for a couple of weeks. The white grapes fermenting alongside the red lift the whole thing, and the result is a light, translucent red built entirely for drinking rather than contemplating. It's farmed organically, pressed by hand in an old wooden basket press, and bottled unfiltered, with only about 3,000 bottles made. Serve it with a good chill and it disappears fast.
