Nicolas Rossignol is a fifth-generation vigneron who does something slightly mad: he vinifies every parcel separately, which means eight different Pommards and seven different Volnays coming out of one cellar. That obsessiveness is the whole point. Pommard is the muscular one, the village of iron-rich clay that gives darker fruit and broader shoulders where neighboring Volnay gives silk. Rossignol works with biodynamic principles, hand-harvests, and bottles with a light touch, so the muscle comes with real transparency rather than brute force.
