Nearly every sparkling rose you will ever drink is Pinot Noir and Chardonnay. The Ligier family, working the marl and clay slopes of Arbois, throws Trousseau into the blend instead, and Trousseau is the Jura's cult red grape, usually far too precious to be bubbled. It changes everything: where most rose sparklers are soft and strawberry-sweet, this one has spice, grip, and a wild edge. Gently macerated to a pale pink, then aged 30 months on its lees, which is longer than a lot of Champagne. Serious wine, minimal fuss.
