The Fichet family has been farming vines around Ige since 1408, which is roughly 300 years before Champagne figured out how to put bubbles in a bottle on purpose. Today Pierre-Yves and Olivier run one of only three domaines in this Maconnais village, and their Cremant is all estate Chardonnay, organically farmed, fermented with native yeasts and aged on the lees in bottle for at least a year. That is a lot of care for a wine most people treat as a fallback. Skip the fallback framing: this is a serious sparkling wine that happens to cost far less than the region to the north.
