Find paradise in a glass: Cassis is a tiny Mediterranean appellation, one of France's very first AOCs, with only about a dozen wineries, and Bagnol is a perennial favorite among them. They farm Grenache, Mourvedre and Cinsault organically just 200 meters from the sea, in clay and limestone hills that descend to the water. Hot sun ripens the grapes; sea and Alpine breezes keep them fresh. The result lands between an easygoing Cotes de Provence and a denser, ageworthy Bandol, with a salinity people love.
