The Devillard family bought Domaine des Perdrix in 1996 for its Cote de Nuits reds, and that is still what everyone talks about. Which is why almost nobody notices they also make a white. It comes from a sliver of Chardonnay planted up on the plateau above Premeaux-Prissey, 300 to 400 meters above sea level on clay over limestone, where the air is cooler and the ripening is slower than down on the famous slope below. The fruit is hand-harvested and gently pressed, then aged 14 months in stainless steel, and the wine that emerges is stony and floral rather than rich. Now with a few years in bottle, it is drinking exactly where it should be.
