Domaine Ciringa Podravje Sauvignon Blanc Pruh 2018
Pruh means quarry, and that is more or less what the parcel is: near-pure limestone, the hardest ground on the Ciringa hillside. It is Domaine Ciringa's flagship, a single-cask selection bottled only in years when the wine earns it. The first vintage was 2015, which sat 66 months on its lees before bottling; 2018 is only the second release. Everything is done the slow way here, on a steep hill above the Slovenian-Austrian border: organic and biodynamic farming, extended skin contact for tannic backbone, spontaneous fermentation carried out without sulfur, years of patient aging in large oak, and bottling with no fining and no filtration. Sauvignon Blanc almost never gets treated with this kind of seriousness, and essentially never from this corner of Slovenia.
