Jerome Coessens takes grower Champagne to its logical extreme: one vineyard, one grape, one vintage, one man doing everything himself. He owns all of Largillier, a monopole in the Aube, where he farms Pinot Noir on limestone that runs the same seam as Chablis. The result is Champagne with the muscle and fruit density of grand cru Burgundy, wrapped around a vibrating, salty minerality. Some of these grapes get sold off to Guillaume Selosse, whose bottles are nearly impossible to find ā so this is a rare chance to taste the source. The warm 2020 vintage makes it especially lush and round.
