If La Moussiere is Mellot's limestone showpiece, Les Romains is its flinty counterpoint. This tiny, steep vineyard sits on a vein of silex, pure flint, along a geological fault, and that stone stamps the wine with a smoky, gunflint intensity you can't fake. It's Sauvignon Blanc at its most serious and structured: tense, savory, and built to age, with a mineral spine that runs the length of the palate. Give it air, or better yet give it a few years. One of the great single-vineyard Sancerres.
